Semi-Homemade Tacos:
Ingredients:
1 Rotisserie Chicken
2 Avocados
1 tablespoon of Lime Juice
1 Can of Refried Beans
Cheddar Cheese
Sour cream
Your choice of hard or soft Tacos
Ingredients for Salsa:
2 teaspoons of extra virgin olive oil
1 1/2 Cups of diced yellow onion
2 large tomatoes (diced)
1 clove of garlic (finely chopped)
Salt
Pepper
1 eight ounce can of tomato sauce
Cilantro
Procedure:
Place medium-sized pot over medium heat on the stove. Next, pour in the olive oil in the pot and wait until it gets warm. When slight bubbling begins, add in the onions, tomatoes, garlic, salt, and pepper and mix it all together. Lower the heat, and cover the pot for approximately 15 min or until onions and tomatoes are visibly cooked. Uncover the pot and add in the tomato sauce and mix all ingredients together. It should look something like this:
After incorporating the tomato sauce, add in the cilantro. Cover the pot and lower the heat.
Next, take the rotisserie chicken and shred all the parts of the chicken so that it looks like this in the end:
Next, take the can of Refried beans. Open it, heat the beans on the stove for about 12-13 min on medium heat, and stir occasionally. Once they are hot, they are ready to be served.
For the Guacamole, take the 2 avocados and simply take a spoon, and scoop out the fruit. Mash it all together and finally, add the lime juice and a little bit of salt to the avocados.
Finally prepare your tacos as you like.
Enjoy!
